POSITION
The vine is located in the Sant'Urbano area in Apiro, in a beautiful valley on the border between the provinces of Macerata and that of Ancona, at around 500 meters above sea level.
VINEYARD
An extension of 2 hectares, 45 years of age, with production of 70q/Ha.

VINIFICATION
The bunches are carefully selected, in the oldest part of the vineyard, harvested by hand and placed in boxes.
In the cellar the grapes are destemmed and subjected to cryomaceration for 24 hours to allow the must to extract as many aromas as possible from the skins and make the wines more full-bodied.
During racking, only the free-run must is extracted and subjected to cold stabling for 5 days at a temperature of 5 degrees.
Fermentation takes place in refrigerated stainless steel tanks, therefore the must is kept at a constant temperature of 14/16 degrees.
AGING
The wine remains aged for approximately 12 months in steel tanks completely filled and inertized with Argon or Nitrogen, and is processed with Batonnage every 30 days.
The wine remains in the bottle for another 12 months before being released on the market
